It rides the food harmful bacteria and extends the food's life by creating an acidic environment or by using an anaerobic fermentation in a salt brine. Pickling also adds and provides for great expression in flavors.
Finally, remember that Grandma's pickling recipes will not work or be safe with modern vinegar.
