Disclaimer: Gumbo is a very hardy dish and by all that is holy, don't mess up the roux! I use real butter with equal amounts of flour to make the roux. Also, 10 min before my gumbo is done, I add in shrimp instead of okra. (My family doesn't like the consistency of okra). Some other seafood you can add are lobster, oysters or mussels. Gumbo is food for the soul and great to eat on a cold winter's day. Enjoy!
