Blood tests for celiac disease only test for 1 or 2 antigens, but the body can produce over 70 different antigens for Celiac Disease. Also, think of gluten sensitivity as a wheel with spokes coming off it like acne, PMS, Celiac disease, diabetes, gallstones, non-alcoholic liver disease, anxiety, depression, and insomnia.
