Well someone who knows a thing or two about milk is chef, gourmet farmer, food critic and author Matthew Evans and he is calling out those faux milks in a new highly researched book titled: "Milk – The truth, the lies and the unbelievable story of the original superfood". Poland’s third largest city, Wroclaw, is full of surprises. This humble city has been through multiple regimes over the centuries and established its identity as a European Capital of Culture in 2016. Known as the “Venice of the North,” this vibrant, walkable city on the Oder River is a colourful mesh of old and new. Brimming with students who attend one of the more than 20 universities, Wroclaw has a young and energetic vibe. Karin Avila spent three days exploring the city, diving into its history, and sampling local cuisine.

Chef Roy Yamagishi is one of Hawaii’s most successful chefs and restaurateurs. A founding member of the Hawaii Regional Cuisine movement. Graduating from the prestigious Culinary Institute of America in New York and trained in the traditional French kitchen he worked in Los Angeles initially developing his own unique fusion style dishes influenced by his Japanese grandfather. On returning home to Hawaii he believed the Hawaiian cuisine could be developed into its own style with fresh local ingredients. Now, as he tells Graeme Kemlo he is celebrating the 14th year of the upcoming Hawaii Food and Wine Festival staged across the Hawaiian islands from October 18 to November. 10.
