D’origine italienne, le mot barista (au pluriel « baristi ») a été diffusé, comme les autres termes italiens du café (cappuccino, latte, espresso….) dans le monde entier par la Seconde Vague née sur la Côte Ouest des Etats-Unis au début des années 70.
Aujourd'hui, on l’assimile souvent au sommelier du café, pourtant il a beaucoup plus de points communs avec le pâtissier : précision des températures et des dosages, respect des temps, rigueur et capacité à reproduire la même boisson avec régularité. Comme le pâtissier, il dresse ou monte sa boisson à la demande, et le plus souvent devant le client.
