Shrimp scampi- about 30 shrimp, I started with frozen shrimp so I put them in a cool water bath to thaw while I melted  ½ stick of real butter, a dribble of a few ounces of white wine, a dollop of garlic, 2 TBSP pesto of choice, and simmer it for awhile. Add the thawed shrimp and let them lightly brown. Remember to toss them so they don’t burn and not for too long bc you don’t want them to get rubbery. If you use more shrimp, just add more goodness
