What vegetables can replace glycogen stores?

On this edition of the LCHF podcast, we’ve got a question submitted by Joyce Fung to Vinnie Tortorich, America’s angriest trainer. Vinnie, today’s question is quite an interesting one because I know you’re pretty fit yourself and you enjoy the endurance stuff, but Joyce wanted to know, with regards to replenishing glycogen stores for martial artists, particularly for athletes who require large power outputs during training for kicking, punching and throwing and that sort of thing.

In the past a lot has been spoken about starchy carbohydrates to replenish those stores, like potatoes and and taro, would eating non starchy vegetables be enough to replenish those glycogen stores and the reason she’s asking this, particularly aiming at a Chinese female with athletic body on a LCHF diet.
