Asian Calamari And Citrus Salad
What You Will Need:
Measuring cups
Measuring spoons
1 sharp kitchen knife for slicing
1 greater
1 knife for pealing
Mixing bowls
1 whisk
1 shallow dish or large freezer bag
a cooking grate
Paper towels
Ingredients:
3 naval oranges
¼ cup of olive oil
¼ cup of red curry paste
¼ teaspoon of salt
¼ teaspoon of pepper
1 pound package of cleaned calamari (tubes and tentacles), rinsed
Cooking spray
1 cup of thinly sliced red onion
Fresh cilantro leaves
Cooking Directions:
Grate orange peel zest to 1 teaspoon.
squeeze juice from 1 orange to obtain 1 third cup of juice
Peel and section remaining 2 oranges. Coarsely chop sections.
Whisk together orange zest, orange juice, olive oil, red curry paste, salt and pepper in a bowl and reserve 3 tablespoons mixture for later use.
Pour remaining marinade into a large shallow dish or zip-top plastic freezer bag; add calamari.
Cover or seal and chill 2 hours,
turning occasionally.
Remove calamari from marinade, discarding marinade.
Coat a cold cooking grate with cooking spray, and place on grill.
Preheat grill to 400 to 450 degrees (high) heat.
Grill calamari tubes and tentacles, without grill lid, 4 minutes, or until firm,
turning once.
Place calamari in a large bowl;
add red onion, cilantro, chopped orange sections and reserved 3 tablespoons marinade; toss gently.
Notes:
Red curry paste gives this marinated calamari a huge flavor boost. This dish is great hot off the grill or chilled.
Shrimp can be substituted for the calamari, if you prefer.
Makes 4 servings.

Keeping Food Fresh:
Lettuce And Celery:
* Lettuce and celery will keep longer if you store them in the refrigerator in paper bags instead of cellophane ones. Do not remove the outside leaves of either until ready to use.
* Lettuce won't rust as quickly if you place a paper towel or napkin in the storage container.
* Line the bottom of the vegetable compartments with paper toweling. This absorbs the excess moisture and keeps all fruits and vegetables fresher for a longer period of time.
Sprouting Onions:
* To keep dry onions from sprouting and becoming soft, wrap individually in foil. They will stay firm for some time.
