Bittersweet Chocolate Espresso Crème Brûlée
Ingredients:
½ cup chopped bittersweet chocolate
5 egg yolks
1¾ cups heavy cream
½ cup granulated sugar
¼ cup espresso
¼ cup Demerara or raw sugar
Cooking Directions:
1. Arrange 5 (6 ounce) ramekins or custard cups inside Crock-Pot.
2. Pour enough water to come halfway up sides of ramekins (taking care to keep water out of ramekins).
3. Divide chocolate among ramekins.
4. Whisk egg yolks; set aside.
5. Heat small saucepan over medium heat.
6. Add cream, granulated sugar and espresso;
7. cook and stir until mixture begins to boil.
8. Pour warm cream in thin, steady stream into egg yolks, whisking constantly.
9. Pour through fine mesh strainer into clean bowl.
10. Ladle into prepared ramekins in bottom of Crock-Pot.
11. Cover; cook on high 1 to 2 hours, or until custard is set around edges but still soft in centers.
12. Carefully remove ramekins; cool to room temperature.
13. Cover and refrigerate until serving.
14. Spread tops of custards with Demerara sugar just before serving.
15. Serve immediately.
Makes 5 servings.
Hints and Tips for the Kitchen:
Substitutions: No Sugar?
* You can often substitute, measure for measure, packed brown sugar (light or dark) with no adjustments. You will get a light molasses flavor, however.
Substitutions: No Vanilla Extract?
* A batter or dessert can be flavored with grated lemon or orange rind and a little lemon juice.
* Use 1/4 teaspoon nutmeg for each teaspoon vanilla extract.
* Use a dusting of cinnamon.
