Pumpkin Chiffon Pie

Ingredients
For the filling
3 cups 100% pure pumpkin
1 cup white sugar
1 cup heavy cream otherwise known as whipping cream
Six egg yolks
One and a half teaspoons ground cinnamon
1 teaspoon ground ginger
Half a teaspoon of salt
Half a teaspoon of ground nutmeg
Half a teaspoon of ground allspice
Half a cup of water or Drambuie
8 teaspoons of unflavoured gelatin or one whole package of Knox unflavoured gelatin
For the meringue
Two pinches of cream of tartar
Two pinches of salt
Eight egg whites
2/3 cup white sugar
For the crust
Two ready made Graham cracker crusts
Or two frozen pie shells
Or make your own with the following ingredients
120 vanilla wafer cookies totalling 4 cups crumbs
12 tablespoons salted butter melted and cooled
Half a cup of white sugar
