Dom’s Fluffy Pancake Recipe

Ingredients

2 cups all-purpose flour (10 oz) 1 cup whole wheat flour (5 oz)4 tablespoons sugar 2 tablespoon baking powder ¼ teaspoon baking soda1 teaspoon salt 3 cups milk 6 tablespoons unsalted butter melted 4 large eggs 1 teaspoon vanilla (optional)

Directions

Prepare and preheat your griddle. (Set the electric griddle between 350°F and 375°F.) Coat the hot griddle with butter by rubbing a stick across the hot surface. Wipe up the excess so it won't burn.Whisk together in a large bowl the flour, sugar, baking powder, and salt. Whisk together in another bowl, the milk, butter, eggs, and vanilla.Pour the wet ingredients over the dry ingredients and gently whisk them together, mixing just until combined. If you wish, fold in one or more of the following: 1/2 cup frozen or fresh blueberries or raspberries, 1/2 cup thinly sliced ripe bananas, 1/2 cup crumbled cooked bacon, 1/4 cup grated semisweet or milk chocolate.Spoon 1/3 cup batter onto the griddle for each pancake, nudging the batter into rounds. Cook until the top of each pancake is speckled with bubbles and some bubbles have popped open, then turn and cook until the underside is lightly browned. Serve immediately or keep warm in a 200°F oven while you finish cooking the rest.
