  • 04/23/17: Saz's owner Steve Sazama
In this week’s WTMJ Conversations, Gene Mueller talks to the owner of Saz’s State House Restaurant, Milwaukee native Steve Sazama, a.k.a. Saz, about his “new professional life.”
Steve says he has been able to move more to the background of things these days while letting his son and other employees take over. He says it wasn’t hard since they have the “Saz mentaliity.”
Steve was working at Major Goolsby’s when he decided he wanted to start his own business in 1976. With just a nickel in his pocket, the rest is history. In this episode, he explains where came up with concept and finding the perfect location. At first, they only sold ribs two days a week. He thinks it was important to focus on just one food item rather than a large variety of items.
Steve has now been in business for 41 years now. During that time, several other local restaurants have come and gone. What’s the secret to Saz’s success? He tells Gene that Summerfest was one of the biggest keys. He also says that right now is a time where it’s hard to find good help because of Milwaukee’s booming restaurant scene.
With mix of TV shows and competitions, has it changed what customers expect? Steve says yes -- people are much more demanding nowadays, but also are open to trying new things. Social media has also changed things. It’s something he must always keep an eye on.
Listen to the full podcast above to hear all of these topics, including his explanation of how much Summerfest has evolved. The restaurant has partnered with the festival since the early years. Steve says he’s looking forward to this year and unveiling their new space.
