Looking beyond grape wines, TUX uncles explores the world of Spanish Jerez/sherry wine with Yiting Wang (王依亭). Sherry wine goes very well with Taiwan cuisines and snacks - chicken feet, rice balls, and braised tofu are just some that comes to mind immediately.

Sherry comes in several categories. Dry vs. sweet is the main demarcation. Fino and Manzanilla are the more familiar dry sherry types. When fermentation ends with around 12% alcohol, brandy is added to fortify the wine to 15%. It is then aged with (naturally occurring) la flor (酒花) which is a type of mold that grows on top of the wine in the barrel. Flor helps to minimize oxidization and imparts the distinctive sherry flavor.

Solera is the aging system where the wine barrels are positioned with the youngest on top to the oldest at bottom. Every year before new wine is poured into the top barrel, each of the successive vintages of older wine are drained one level lower to make room. In other words, sherry wine is always a blend with prior vintages.

Serving: keep it cold and an open bottle can easily keep for one month.

本集主持人Ariel最近在科學期刊上發現一篇有趣的文章「為什麼人習慣把事情複雜化？」正好和幕後團隊們想和大叔聊的主題有關係。因為和大叔共事以來，學到的經驗非常多，但最讓人印象深刻的能力便是把事情複雜化🤣本集就來探究（大家也很好奇的）大叔的內心小宇宙是如何運行的吧！ 

大叔甲提到在學期間對於思維的訓練，將一百字文章延伸成一千字，再回頭用更少的字濃縮整篇文章的重點，也許是這樣的經驗影響了現在的自己。大叔桑則用去拜訪阿嬤這樣一件日常活動，細膩地分為三個層次，從表層的時間規劃、知會他人，再到思考此事的意義為何，會如何影響他人。

為何要將事情複雜化呢？除了因為長期訓練，已經內化成大叔不可抗力的一部分，也是為了避免後續讓事情變得更複雜！當然這也可以當作一個保護機制，因為在某些事上犯過錯，為了精進學習，於是拆解每一件事的層次，仔細探究它們，也是這樣才造就了這樣的大叔們吧！

What do global hegemons face today? Nothing happens in vacuum and TUX uncles recounts what has transpired in recent past to set the stage.

Election of Trump as American president sent a clear signal that American populace is turning inward looking. In the midst of the tumults of the Trump presidency, the COVID-19 global pandemic removed the fig leaves that covered the official hubris and weak links around the world all at the same time.

In 2021 alone, despite the chaos in the wake of the US president Biden's pulling out of Afghanistan, it is also a clear signal of the long-discussed American pivot to Asia. This event was quickly followed by the AUKUS deal where US and UK will provide nuclear submarines to Australia which everyone assumes is a way to counter China's bellicose stance in SE Asia in recent years. Finally, Ms Meng of Huawei was released from Canada. While this clearly marked the end of the Trump era, does this foretold a new era of détente or just the start of a new match between China and US is anyone's guess.

Finally, to add spices to these developments, Germany, Russia, Japan, Canada, and, soon, China, will have leadership election.

TUX uncles discuss ideas and ways to view the new world order and options available to superpowers. Vaccine is clearly a new diplomatic tools on the world stage. Behind the scene, China has had much success in engaging with supranational (e.g. UN) agencies occupying leadership positions. As such, this provides China with the ability to set agendas in these multilateral conversations. Finally, on the economic front, despite the interwoven nature of global economy, it is still possible to weaponize specific aspects of economic conditions, such as inflation and FX fluctuation.

You may look down on it as American (Hollywood) cultural imperialism, but there is nothing insincere about TUX uncles' desire to be a James Bond (007), a Jedi Knight, or an Avengers - same earnestness applies to most people's familiarity with hotdog, Broadway shows, and American values. This is known as SoftPower (軟實力: https://zh.wikipedia.org/zh-tw/%E8%BD%AF%E5%AE%9E%E5%8A%9B). TUX takes a look at how SoftPower is acquired and maintained.

Kelly (陳慧如), a script writer for several award winning TV shows and movies, looks at the rise (and relative decline) of cultural prowess of Japan and Korea.

Japanese entertainment used to dominate Asian attention but it is shaped by Japanese domestic consumers and business model. This results in a content format that has not changed for decades despite innovation and competitions from new comers such as Netflix. On a relative scale, Japanese content is less compelling outside of Japan today. Where Japan has continued to have a major presence is Anime (animation) which retained its flexibility due to its origin in comic books.

With the success of Korean TV series Autumn in My Heart (藍色生死戀) in 2000, Korea created a government department for entertainment and tourism. The heads of the department reads like a list of who-is-who of Korean entertainment éminence grise. This structure gives the department credibility and attracts talents to participate in policies creation and implementation.

Korea also restricts imported content and requires showing of domestically produced content during prime time. These policies allow its domestic industry to survive the early growing pains. It is also supported by Korean chaebols which treat entertainment as a business. Namely, Korean content is driven by producers who focuses on the commercial viability, unlike Japan (or Taiwan) where directors dominate. Today, we see Korean entertainment has become a major force on the world stage , to wit Parasite (寄生上流) won the 92nd Academy Awards (Oscar): Best Picture, Best Director, Best Original Screenplay, and Best International Feature Film.

興趣是如何養成的呢？不論是運動或拍照，要開始做一件事總是需要契機，而要變成興趣，還需要之後經年累月的持續，慢慢擁抱喜歡的事物、排除不喜歡的事物，最後某件事才會出現在自己的興趣欄位。

而後來年輕人們也從興趣聊到了「生活中的儀式感」，儀式感就如同興趣一樣重要，都像是支撐自己生活的動力，如果一天當中的某個時刻沒有做某件事，就會渾身不自在。

TUX uncles today continue to discuss things that keep China’s military up at night with our military analyst speaker, Xiaowei.

Since 2016, five years ago, the PLA (People’s Liberation Army) of China has been singularly focused on upping it capabilities for joint operations (聯合作戰) in which various service branches come together under one unified command. While its top brass has demonstrated revolve by throwing resources behind this modernization reform, the PLA encounters challenges on two fronts: (1) technology know-how (research innovation capability) and (2) human capital (people issues), Xiaowei points out.

The traditional Western view is that both of these challenges can be more readily overcome in an open society where best ideas and people rise to the top as a result of competition. Can the PLA overcome them? Regardless, the PLA appears to have been on a path of modernization. It may just be a modernization process with Chinese characteristics. The world (especially the US, and China’s neighbors in the region) should all take heed without discounting the PLA’s stated direction and magnitude.
