* 4 fresh corn
* 3 cups finely chopped cabbage
* 4 green onions, sliced
* 1/2 cup red onion, chopped small
* 1/2 cup chopped cilantro
* 1 cup black beans
* 1 cup diced cucumber
* 3 tablespoons lime juice
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1/4 cup avocado oil
* 1 large ripe avocado or 2 medium ripe avocados
* Salt and pepper to taste
* Tortilla chips
Heat up a large pan on high heat. Place your corn in the pan and cook for about 3-4 mins per side or u til well charred. Remove from heat and allow to cool. When cooled, Use a sharp knife to carefully slice down each side of the corn cobs to remove the kernels. Set aside.
In a large bowl, mash your avocados with lime juice, salt, pepper, and avocado oil. Mix until very well combined. Add the chopped cabbage, red onions, black beans, cilantro, cucumber, salt and pepper. Mix until everything is well incorporated. Transfer to a serving bowl, serve with tortilla chips and Devour!
