In the early part of 2022 I headed north of Inverness in Scotland to join Lloyd Morse and Sam Thompson in search of deer; deer which was destined for the plate of customers in The Palmerston restaurant in Edinburgh—recently named one of the top 100 places to eat in the UK. The is an episode about food sourcing and the delight of being enthused by the raw ingredients of a meal, from a man not afraid to say it as it is.
