Egg Stew Recipe:
Ingredients:
Tomatoes-10
Onion, diced-1 large
Red bell pepper-2
Habanero peppers-to taste
Veg oil-1/4 cup
Bouillon - 1 cube
Anise seeds, ground-1T
Rosemary, ground-1/2T
Bayleaves, 3
Corned beef-1 can (optional)
Eggs-10
Salt - tt
MOP:
Dice or slice onion and set aside.
Add tomatoes, bell peppers and habanero to food processor and pulse about 8-10 times (you can puree it if you like). Heat oil on medium high heat, add and sweat onion for a minute or two. Add tomato mixture and cook until it reduces slightly. Stir in bouillon and spices, cook for an additional 10 minutes. Add corned beef, taste and adjust seasoning if needed. Crack in eggs one at a time cover and let eggs set. If you like your eggs runny allow only a few minutes, if you like your eggs a bit more done allow extra minutes. Enjoy with steamed rice, pasta, potatoes, etc.
P.S “Exeter Corned beef” can be found in many African markets or Amazon.
You can also use any seasonings of your choosing, I like the combination of anise seeds and rosemary.
