  • Earl Grey - The Blue Sits Between

The cup opens quickly, the colour shifting from amber to copper and stopping just short of red-brown. In the swirl, dark leaves soften and pale curls of rind hold their shape, but one thing stands apart: a blue petal, bright as a summer sky, untouched by the water around it. It gives nothing away, not to the aroma, not to the taste, and yet it holds its place, unchanged, in a cup that has gone entirely brown. Almost nothing in nature is truly blue, and what appears so is only an arrangement—several ordinary things, none of them blue, held in perfect relation. Some things exist only in the space between their parts.

Today's cup: Earl Grey — Camellia sinensis, bergamot, citrus peel, cornflower petals, bergamot essential oil.

1 tsp, 200mL, 100°C, two minutes straight or three-plus with milk.

  • Earl Grey - The Only Part That Lingers

The cup of Earl Grey changes quickly, the colour rising and settling into amber and copper before you can look away. In the swirl, nearly everything softens and gives in, except for one pale, curled piece that holds its shape against the water. The aroma lifts bright and sharp, then settles into something rounder and faintly bitter, a note that lingers after the sip is gone. The citrus in this blend is younger than it seems, a hybrid with a story that didn’t begin as planned. Most things that feel permanent turn out to be improvisations, arrived at by chance and kept because they worked.

Today's cup: Earl Grey — Camellia sinensis, bergamot, citrus peel, cornflower petals, bergamot essential oil.

1 tsp, 200mL, 100°C, two minutes straight or three-plus with milk.

  • Earl Grey - The Fruit Nobody Eats

The cup is Earl Grey, and the colour rises quickly, then stops just before it turns brown, holding at a glowing amber-copper. In the leaves, something blue sits among the copper and brown, a colour that doesn’t belong. The scent is citrus, but not the kind you eat—there’s a floral edge, and a bitterness that comes from the rind, not the juice. The fruit behind this is grown for its skin, not its flesh, and almost nobody has tasted it. The part that matters is the one nobody was looking for. What else is kept for a reason that isn’t obvious?
Today's cup: Earl Grey — Camellia sinensis, bergamot, citrus peel, cornflower petals, bergamot essential oil.

1 tsp, 200mL, 100°C, two minutes straight or three-plus with milk.

  • Peacock Chai - The Newest Arrival by Centuries

A cup of Peacock Chai is a study in layers: bark, buds, roots, pods, seeds, and a single dark leaf, all steeping together. Every spice in the pot has centuries of history in Indian kitchens and medicine cabinets, but the tea leaf is the newcomer—folded into tradition by circumstance, not design. The result is a cup that feels ancient, yet is younger than it seems, its seams invisible but still there if you look.

Today's cup: Peacock Chai — Camellia sinensis, ginger, cloves, pepper berries, cinnamon, fennel, cardamom, black pepper, pink peppercorns, agave.

1 tsp, 200mL, 100°C, two minutes black or four with milk.

  • Peacock Chai - Three Separate Aisles in a Supermarket

The cup in your hands turns dark almost before you notice, copper then deep red-brown, hiding the smallest thing inside. Among the bark and buds, one pale, ridged seed sits quietly, easily overlooked. It's the only thing in the cup that's also eaten as a vegetable, but here it's something else entirely. Three foods, one plant, never found together on the same shelf. What else gets treated as though its parts barely know each other?

Today's cup: Peacock Chai — Camellia sinensis, ginger, cloves, pepper berries, cinnamon, fennel, cardamom, black pepper, pink peppercorns, agave.

1 tsp, 200mL, 100°C, two minutes black or four with milk.

  • Peacock Chai - The Bud Never Opens

Peacock Chai opens in the cup with a colour that deepens almost before you can watch it, from amber to copper to a red-brown that closes off the light. Somewhere in the blend, smaller than the cinnamon or the root, is a bud that never opened—a dark, nail-like shape with a cross at the tip, holding everything it might have become. The warmth in the aroma and the numbing sweetness at the back of the nose both trace back to this one unopened thing.

Today's cup: Peacock Chai — Camellia sinensis, ginger, cloves, pepper berries, cinnamon, fennel, cardamom, black pepper, pink peppercorns, agave.

1 tsp, 200mL, 100°C, two minutes black or four with milk.

  • Peacock Chai - Pick One Too Early and It Never Develops

The cup is Peacock Chai, and in the swirl of colour and steam, there's one thing in the blend that stays sealed, a pale pod holding everything inside. The rest is open—roots in fragments, bark split, seeds scattered—but this one waits, whole, until the moment is right. Some things in the cup, and in life, don't open on anyone else's schedule.

Today's cup: Peacock Chai — Camellia sinensis, ginger, cloves, pepper berries, cinnamon, fennel, cardamom, black pepper, pink peppercorns, agave.

1 tsp, 200mL, 100°C, two minutes black or four with milk.

  • Peacock Chai - The Variation Is the Recipe

The cup is Peacock Chai, and the colour arrives before you can name it—amber, copper, then a red-brown you can't see through. In the swirl, dark twisted leaves open beside curls of bark, seeds, pods, and peppercorns, each shape holding its own story. There is no single recipe for this blend, only the version handed down, argued over, and made real by the person who taught it. The variation is the recipe, and every cup is the original to someone.

Today's cup: Peacock Chai — Camellia sinensis, ginger, cloves, pepper berries, cinnamon, fennel, cardamom, black pepper, pink peppercorns, agave.

1 tsp, 200mL, 100°C, two minutes black or four with milk.

  • Jasmine Pearls - Three Cups From the Same Leaf

Pour a second cup from this morning's tea leaves and something has already changed. Jasmine's scent is carried by compounds that are highly volatile, which means most of it leaves in the very first pour — by the third infusion it's barely a suggestion, and what's left is simply the tea, quieter and more itself. Three cups from one leaf, and only one of them was ever the loudest.

Today's cup: Jasmine Pearl Tea — Camellia Sinensis.

1 tsp, 200mL, 80°C, three minutes. Takes three infusions.

  • Jasmine Pearls - Still Wearing Its Down

Look closely at the tea leaf opening in this cup and one piece hasn't quite joined the others — paler, with a faint silvery coat that looks almost like down on a feather. That's not a flaw. It's the youngest growth on the plant, and tea graders have a word for it that comes straight from a southern Chinese term for white down. The more of it still visible, the earlier the leaf was picked — proof of age that exists for a short window and then vanishes for good.

Today's cup: Jasmine Pearl Tea — Camellia Sinensis.

1 tsp, 200mL, 80°C, three minutes. Takes three infusions.
