Recipe ingredients:
* 8 corn or four tortillas
* 1 16oz can of vegan regular or black refried beans
* 1 10oz can of enchilada sauce
* 1 package of vegan meat alternative (optional)
* 1 cup vegan cheese (optional, I used Daiya Mozzarella shreds)
* 5 small red potatoes, washed & cubed
* 5 mini sweet bell peppers or 1.5 large, washed & cubed
* Half a zucchini, washed & cubed (peel, optional)
* 1/2 cup fresh or frozen corn
* 1 small can of green chiles
* 1/4 cup Good Foods Plant Based Queso Style Dip
* 1-2 tbsp of olive oil (optional)
* 1/2 tbsp of spices: cumin, black pepper, chili powder, onion powder (optional)
