As promised, here is Joe's recipe:
Vegan Pasta Alfredo
- Put spaghetti on to boil
- Finely chop onion and garlic
- Add onion until soft then add garlic and cook until soft
- Add almond milk, cashews and nutritional yeast (or parmesan if you want)
- Cook until cashews have softened and milk has reduced a bit
- Blitz sauce
- Drain spaghetti when ready, keep pasta water
- Add spaghetti to sauce with a bit of pasta water
- Serve
- Eat, yum.
