Simon won Ultraman Australia in 2023 in a world-record time of 19:48:47, before going on to win the Ultraman World Championships in Hawaii later that year, becoming the first man to break 21 hours on the course.
We spoke about his journey from Ironman racing into Ultraman, what it takes to race for three days straight, how he manages pacing, fuelling, training, recovery and mindset, and why the simple things matter so much when the distances become extreme.
Simon also shared insights into coaching, family life, trail ultras, and what keeps him chasing huge endurance challenges after already reaching the top of the sport.
