Make 2019 the year you eat more fruits and vegetables and less processed food. You don't have to be a great cook to eat healthy. Mother nature did the work for you!
If eating fruits and vegetables every day is not your norm, just taking baby steps until it becomes a habit!
On this episode we are sharing recipes to include Dr. Janis Jackson's Delicious Cannelli and Kale Soup Recipes:
Yields: 4 servings (1 serving = 1 cup)
Total time: 15 prep + 30 cook time
1 15 ounce can cannelli beans
2 teaspoons smoked paprika
2 cups low sodium vegetable broth
Rinse Kale and remove stems. Cut Kale leaves crosswise in 2-3 inches pieces and set aside. Open can of cannelli beans place in a strainer, rinse beans thoroughly, set aside. ( washing the preservatives off the beans)
In a 2 quart sauce pan, add olive oil, onion, leek, thyme and garlic, cook on a medium heat until soften about 3 minutes.
Add the vegetable broth and water to sauce pan, add smoked paprika, carrots and cannelli beans bring to a boil, let boil for about 2 minutes, then reduce heat.
Add the cut kale to the sauce pan, season to taste with salt and pepper, then simmer for 20 minutes.
Notes: Vegetable broth can be substituted for chicken broth
