0:03 Hi everyone, It's day eight. My favorite day so far is holiday baking prep! I love to bake and I don't get to do it very often so during the holiday season I really pour it on. So today I want to talk about what we can do to take the stress out and get started early.  

0:21 Select your recipes. Right there. You can be sure that my grandmother's white fruitcake is at the top of my recipe list. I love fruitcake and hers is the best. It's white. It's not brown and it only has cherries in it- nothing else. Nothing green. None of the things that people think is so awful about fruitcake. But anyway, get out your recipes and 

0:40 check your supplies and track holiday baking deals at your grocery store. Here's the truth! Baking supplies are at rock-bottom now through the end of the year. A little tip if you can pull it off: now is the time to stock up for the entirety of 2020. I"m serious folks! Come next summer you are not going to want to pay 20 bucks for 10 pounds of sugar to make your sweet iced tea. No. Get it now. They are almost giving it away- if you have the place to store it and the money to pay for it.

1:16 Last, decide what days are going to be your baking days and add those to your holiday calendar right now. It won't come as a big surprise and it won't be really running out of time to get things ready at the last minute.

Don't head out with some kind of a blank canvas in your mind that you're going to go Christmas shopping to get all of your shopping done today and you don't have a clue of what you're going to get- but you're just going to look for "great deals". YOU are the retailer's ideal candidate. They know you have no plan in mind. You will drop so much money, so much credit. You will just buy it up and they're loving it!

0:58 Well, guess what? This is a game! It's like you are going out for a competition. You've got to get ready. They're ready! You're opponent has been in training for months and months and months. So, here's what you want to do.

1:10 Go with a list. Know exactly what you are looking for. Now, you can say "sweater". You don't have to say "black & white", but have some idea of what you're looking for and very important- how much will you spend? How much are you going to spend on that gift for that person?

0:12 It's all about the master gift list and today we are going to figure that out. So get out the paper, pencil, whatever you use to make notes. Add everyone that you've given gifts to in the past. That doesn't say that you are going to now, but write a list. Who are the people that in your heart you think are going to expect a gift from you this year?

0:36 Ahh...it's going to be long. I can feel it already. I can see teachers and neighbors and workmates and cousins and all kinds of people on this list. That's all right. Make the list.

0:52 Take a look and analyze that list. Is a gift really necessary? Is a gift required? Will a gift make that person feel obligated to return a gift to you? This is not the season for guilt and obligation. Although, we let ourselves feel that a lot.

1:14 I hope by making this list, we can categorize now. Divide that list up. Of course your children, your spouse, the people very, very close to you are definitely on the list for gifts.

1:26 But guess what? You can make other lists. You can make lists for cards and such and such like that. Here's the deal. You've got time to make changes now while your emotions are not tied up in the season.

The easiest way to roast a turkey is to set the oven to 325F. Place the turkey in a roasting pan, season with salt and pepper and put it in uncovered. It will take about 3 hours for a 6-pound turkey; add 10-12 minutes for each additional pound, up to 6 hours total for a 25-pound bird. It's done when it reads 165o F. Let the bird rest for 20 minutes before carving for juicier and more flavorful meat.

What is it that you spend money or would like to be able to buy and purchase during the holiday season? Of course, there are gifts. That always comes to mind first thing, but there is so much more than that. There's baking. There's cards. There's entertaining. There's travel. There's gift wrap. There's pageants. There's tickets. On and on it goes. If we just start spending willy nilly, we going to be in trouble by the time Christmas actually arrives.

0:54 Now is the time to write down - get ready, brace yourself, hold on - Write down the total amount of CASH you have to spend for Christmas this year. I mean the whole season. Where is it going to come from? How will you divvy it up between all of your categories?

We've already talked about evaluating your past, which is a wonderful thing to do. Now that you're thinking in those terms, consider holding a family meeting tonight at dinner

Like spending time with their grandparents, staying up late at night, telling stories around the fireplace, having hot chocolate with marshmallows in it.  All of the things- your family traditions.

1:20 Write them down. It will draw your family together, and guess what? It's going to help you maneuver the holidays so that what you do is most meaningful. Which leave little need for stress or getting upset or leaving things til the last minute.

Or something else that you put into a...I don't know...where do you put them? Ha Ha! That's the reason we're going to take an inventory today. Remember, and then go try and find them.
