I recently had a lunch with a very dear friend who can, from time to time be a bit judgmental. I’m sure you’ve meet a few people like this in your life time, or even know a few that you interact with on a regular basis. Hell, maybe you’re one of those people yourself. If you are, I’m not mad at you. I get it, you really feel as though you’re living it right and you know the recipe to the good life. But like BBQ sauce, meatloaf and chocolate chip cookies – there’s a lot of different recipes out there, that will get you the best results… for you! Take this bowl of love I call Mongolian Salad. No, it’s not a traditional Mongolian meal. It’s a salad with meat and Mongolian sauce from Natural Grocers. Is it what you would have made? Probably not, I didn’t even know I was making it until I was done. Will it fill me up with ingredients that are good for me and make me feel good? Yes, you’re dam skippy that it will! And you know what, I might not ever make it again.
You see, recipes are like a foundation for a building. You learn them so that you can start tweaking them. Once you know the basics of a recipe you’d be doing yourself a disservice, if you didn’t start messing with the measurements, the order in which they’re combined and… where you source those ingredients from. It’s your duty as a cook to make these recipes… these frameworks your very own. While you’re at it… give it a silly name… and don’t you dare write it down. You only write it down when you can imagine life without it from this day forth. Otherwise, it’s a meal and it need only please you in the here and now.
