Native to Europe, clary sage is a softer and gentler version of her well-known brother sage. She grows 1-2 metres high, with long green-purple leaves and pink, blue or white flowers. It is from these leaves and flowers that the essential oil is steam-distilled. Her old name ‘clear eye’ is based on her traditional use in healing eye ailments. Clary Sage has been valued since the Middle Ages for bringing peace, inducing euphoric states and helping to keep secrets.

The indigenous Bundjalung people of eastern Australia have long used Tea Tree as a traditional medicine for many years in a variety of ways, including inhaling the oil from the crushed leaves, rubbing leaves on their skin and brewing an infusion of the leaves to make a tea. The latter use is why Captain Cook named the plant the tea tree. Palo Santo wood is highly prized for its unique essential oil, which is only produced by the tree once it starts to die. The oil is extracted from the heartwood after the tree has fallen and been lying on the forest floor for several years. The tree's natural defence mechanism against insects and disease involves producing a resin rich in limonene, an insecticide and antifungal compound. As the tree dies, the resin concentrates in the heartwood, developing the aromatic properties of the oil. Extracting the oil through steam distillation is a time-consuming and labour-intensive
