Maple Butternut Squash Recipe
2 tbsp coconut oil (I used Nutiva virgin)
1/4 c honey (instead of maple syrup)
1 tsp cinnamon
1/8 tsp nutmeg
3/4 tsp salt
Preheat oven to 475 degrees. Line a baking dish with aluminum foil (for easy clean up!). Cut and peel the butternut squash into 1” squares. Add them to a big mixing bowl with all other ingredients (honey, cinnamon, nutmeg, salt). Mix well and transfer to the baking dish. Place in oven for 20 min, then check on them, flip them and return for another 20 min until golden brown on the edges. Make sure not to crowd the squash in order to cook thoroughly.
