In honor of my 4-year anniversary of eating plant-based, I wanted to offer you a practical way to prepare healthy, inexpensive, and tasty plant based meals. So I could not think of anyone better than Toni Okamoto, the founder of Plant-Based on a Budget, author of the Plant-Based on a Budget Cookbook, co-author of The Friendly Vegan Cookbook, and the co-host of The Plant-Powered People Podcast. In this episode, we discuss her unique upbringing that influenced her approach to food. Toni then successfully turned a passion project into her current profession teaching others how to break their meat habit without breaking the bank. With Plant-Based on a Budget, Toni offers affordable time efficient plant-based meal planning accessible to all. We also discuss her perspective on the common misconceptions and main benefits of plant-based eating, the importance of meal planning as a way to mitigate poor eating choices and so much more. I hope our discussion helps inspire you to make healthy, affordable, and tasty plant based meals for you and your loved ones to enjoy!

To kick off Season 2, I review the first year of my podcast with guest host Jeremy Toffle, M.D. We first talk about my path into medicine then my journey to better health, both of which can be traced back to my upbringing and the passing of my father. We then go into the inspiration behind my podcast, a recap of what it’s all about and highlights of some of the memorable moments from this past year. We also briefly discuss some of the difficult challenges I’ve experienced, both personally and professionally, managing the podcast while working as a hospitalist during the pandemic. We end our talk by looking toward the future of my podcast. With the recent wave of the Delta Variant, I hope that my podcast continues to not just inform but inspire you down the path of healthier living.

As part of my Season 2 Launch Series, these next episodes are a collection of short length talks on defining health. The starting point for changing our lifestyles begins with examining our thoughts around health. So this a thought experiment designed to challenge the way you’ve previously thought about health to help redefine it for yourself. That said, my first guest in my Launch Series is Toni Okamoto. Toni is the founder of Plant-Based on a Budget, the popular fun website and meal plan as well as her online presence on Instagram with over 480,000 followers. She is also author of the Plant-Based on a Budget Cookbook, co-author of The Friendly Vegan Cookbook, and the co-host of The Plant-Powered People Podcast. In addition, she was featured in the popular documentary “What the Health.” Toni’s work has been profiled by NBC News, Parade Magazine, and she’s a regular presence on local and national morning shows across the country, where she teaches viewers how to break their meat habit without breaking their budget. And Toni is here to tell all of us how she defines health. I hope her message helps to redefine what health means for you.
