In this episode, I’ll share some of the most beloved springtime ingredients in China: xiangchun sprouts, shepherd’s purse, locust flowers, and fresh peas.

They’re not fancy dishes, but they carry the gentle taste of spring and warm memories of childhood.

Let’s talk about the seasonal menu of spring—and I’d love to hear: What does spring taste like in your country?

1.荠菜（jì cài）

日本語:荠菜（ジサイ）は、春の野原でよく見られる食用野草の一種です。ほんのりとした草の香りがあり、豚ひき肉と混ぜて餃子の具にするのが一般的です。春の訪れを感じさせてくれる味です。

English：Jicai is a wild edible herb that grows in the fields during spring. It has a fresh, grassy aroma. In China, it’s commonly chopped and mixed with ground pork to make dumpling filling. It’s a classic springtime flavor.

2.豌豆（wān dòu）

日本語:豌豆（エンドウ豆）は春に旬を迎える緑の豆です。新鮮なものは柔らかくて甘く、塩だけで茹でても美味しくいただけます。家庭の味として親しまれています。

English：Peas (wandou) are tender green beans that come into season in spring. When fresh, they’re soft and slightly sweet. In many Chinese homes, they’re simply boiled with a bit of salt—a humble but comforting taste.

3. 槐花（huái huā）

日本語:槐花（カイカ）は、春に咲く白い花で、食用としても知られています。摘んだ後、蒸して、塩や醤油をつけて食べます。香りがやさしく、素朴な春の味です。

English：Huaihua refers to locust flowers—small white blossoms that bloom in spring. In Chinese homes, they are often steamed and eaten with a bit of salt or soy sauce. The flavor is mild and delicate, like a quiet spring afternoon.

4. 香椿（xiāng chūn）

日本語:香椿（シャンチュン）は、中国で春にしか食べられない香りの強い若葉です。独特な香りがあり、卵と一緒に炒めて食べることが多いです。好き嫌いがはっきり分かれる食材でもあります。

English：Xiangchun is a type of aromatic tree sprout that only grows in early spring in China. It has a very strong and unique flavor—people usually stir-fry it with eggs. Some love it, some find it too intense.

春は、なつかしさと命の芽生えを感じる季節です。

今回のエピソードでは、中国の伝統行事「清明節（せいめいせつ）」をご紹介します。

由来や習慣、自然の変化についてやさしい言葉でお話しし、

唐の詩人・杜牧が詠んだ古詩《清明》もご一緒に味わいます。
