Fruit-Sweetened Banana Bread / Muffins:

Preheat oven to 350*F
Blend wet ingredients in blender:
1 cup soaked dates (10 mins hot water)
3 overripe bananas 🍌 
1/3 cup milk (any kind)
1 T vanilla 
1 T (big) Apple Cider Vinegar
2 T almond butter
-
Mix dry ingredients in bowl:
2 cup fine ground oat flour (half store bought?)
1 T almond flour (optional)
1 T baking powder
1 tsp baking soda 
Generous sprinkle cinnamon
-
Mix wet in blender and dry separately in a bowl. Fold together until fluffy and just combined!
Option: 1 cup chopped fresh berries tossed in flour or 1/3 cup choc chips
Pour into greased loaf pan or muffin tins 

FOR BREAD: Bake 350 for 35-40 mins until golden
FOR MUFFINS: Bake 350 for 17-20 mins until golden
Let stand at least 15 mins to firm

Best Vegan Ranch Recipe:
1 cup vegan mayo
1/2 cup plant milk
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp pepper
1/4-1/2 tsp salt
2 tsp dried parsley
1 tsp dried dill
Juice of 1/4 lemon OR 1 Tbs apple cider vinegar
Optional:  + Trader Joes Onion Salt
--> Whisk together, taste and adjust to your liking
--> Saves in the fridge for a month
