This iconic highway was established on November 11, 1926, and spans 2,448 miles and 8 states: Illinois, Missouri, Kansas, Oklahoma, Texas, New Mexico, Arizona and California. To commemorate the highway's centennial, "The Route 66 Cookbook" spotlights 66 iconic dining spots and recipes, from roadside diners to steakhouses and fine dining.
