This is my 1st podcast; and what a great 1st it is! My guest on this episode is Deirdre McCafferty. Deirdre is an amazing woman. She is an inspiration to me. Before I even met her, I ate in her restaurant 'Cornucopia' in Dublin's busy city centre. It blew my mind. For anyone who knows me, you know I like my specialist foods. The words gluten and dairy free and vegetarian are high up on my vocabulary list; and to walk into a restaurant 10 years ago, for the first time and for all those words to be written in black and white, (literally) on the black board, was refreshing to me. I felt I had come home. A few years later, I met Deirdre at a completely different event in Dublin that had nothing really to do with the restaurant. We met by accident. It was fate. Since then, we have grown a friendship of kindred spirits. I just love listening to her stories about climate change, spirituality, her time spent working at the Naturopathic clinic in Boston in the 1970's- Hippocrates; and most importantly, her baby- that is indeed Cornucopia, which she has been running successfully for over 30 years.
