means something happens extremely fast, almost instantly. Think about how quickly you blink—it takes less than a second! 

Examples:

1- I looked away for just a second, and my dog stole my sandwich in the blink of an eye!

2- I just got paid yesterday, and now my bank account is empty in the blink of an eye!
