Simon is a Physician, Fellow of the British Medical Association, Author of the book ‘ The Olive Oil Diet’ and Advisory Board Member to the Olive Wellness Institute.
In this conversation, Simon explains the key scientific detail, in an understandable and ‘usable’ way. Providing us with a better understanding of Free Fatty Acids, Polyphenols, Antioxidants and Free Radicals, and what the science means to the olive fruit grower, the olive oil producer and the Extra Virgin Olive Oil consumer.

Brenda Wilkinson has lived in Central Africa from 1990.

Brenda was born in South Africa, trained as a teacher and after school, met and married her husband Nick, and produced two beautiful daughters.
Brenda and Nick bought the olive estate RIO LARGO in 2010 knowing very little about what was ahead of them. Brenda soon became involved in the marketing of the Extra Virgin Olive Oil Nick so passionately produced. Starting from scratch, Brenda has built a brand in ten years with sales that continue to grow in local and international markets, with authenticity and hard work!

In Praise of Soft Light
I like soft light best,
candles and moonlight.
Such light always overlooks a blemish
to highlight the deeper beauty-
the sparkle in one's eye,
the glow of a fire, the contours of the night.
It's not concerned with getting to some final truth,
but instead, naturally gregarious, invites us to talk
of our dreams, our aspirations, indeed anything,
usually over a glass of burgundy,
by a gentle fire, facing out to the stars.
And it doesn't care if we get a little drunk,
stretch the truth, or even cry.
It always tells us to just get it off our chest,
and whatever dark truth we reveal,
it always pats us on the back and forgives us in the end.
But I sympathize, too, with those who gravitate toward the sun.
who revel in the bright light of truth
and assert that they will leave no stone unturned
regardless of the consequence.
They are, I know, motivated by high ideals.
I see them working tirelessly in their labs, universities, and hospitals.
They seem to me spelunkers of the underworld,
bringing previously unknown marvels to light.
And they are brave and beautiful in their way,
but I fear them, too.
They remind me too much of Oedipus
whose relentless search for truth
led to his own destruction.
.
Like many, I fear the darkness,
but I'm fascinated by it, too.
I love driving fast at night,
or walking underneath the stars,
and sometimes I challenge myself
to walk across a room in utter darkness,
though I often hurt myself as a result.
"How could I be so stupid! " I say,
but later, upon reflection, I try again,
and I can't help feeling that such endeavors,
as insignificant as they seem, are important.
Like yin/yang, good/bad, truth/deception,
we need them all, and they are all my friends.
And though I fear and dread them a little,
I also admire those brave souls who explore the darkness,
nearly as much as those who seek the light.
Perhaps, in the end, it is only a matter of temperament,
but I've been hurt too many times by truth to love it overmuch,
and the darkness has proven too dangerous to be more than a passing friend.
On the other hand, when I consider my life,
my happiest times have usually involved
moonlight, candles, a crackling fire, sunrise, or dusk,
and such light has always suggested
that kindness and forgiveness are best,
and so I will always praise soft light
and try to heed its gentle lessons.

An antidote to fear - A Short Meditation
Take into account. That great love and great achievement involve great risk.
When you lose, don't lose the lesson.
Follow the three R's. Respect for self. Respect for others. Responsibility for all your actions.
Remember that not getting what you want is sometimes a wonderful stroke of luck.
Learn the rules. So you know how to break them properly.
Don't let a little dispute ruin a great friendship.
When you realize you've made a mistake. Take immediate steps to put it right.
Spend some time alone every day.
Open your arms to change, but don't let go of your values.
Remember that silence is sometimes the best answer.
Live a good honorable life. When the time comes to reflect on this. You'll enjoy it a second time.
A loving atmosphere in your home is a foundation of your life.
In disagreements with loved ones deal only with the current situation. Don't bring up the past.
Share your knowledge. It's a way to achieve immortality.
Be gentle with the earth and respectful of the seas and the rivers.
Once a year go somewhere. You've never been before.
The best relationship is the one in which your love for each other exceeds the need for each other.
Judge your success by what you had to give up, in order to get it.
Approach love and cooking with the same reckless abandon.
Love as if you've never been hurt.

I see the light falling across your brand on the front of a glass bottle, the light in the golden glow of freshly brewed product, lovely light dancing in the steam coming off a pot of delicious goodness or simply just the beauty of light streaming in through the glass window falling softly on the couch in your reception area.
I marvel at Creation and look to nature for my inspiration, the striking simplicity of intricate patterns, the vividness of colour, the harmony in the wind rustling through the trees, the light dancing on the crest of a wave, the softness of the air in the early morning and the depth of striking stars at night, all touch my soul.

Dr PATRICE NEWELL
Patrice used to be on television, and the co-host of the Today Show but in 1987 she gave it up to become a land manager and moved to Elmswood Farm, a 10,000 acre property in the Hunter Valley, four hours north of Sydney.
Twenty years ago she planted 6,000 olive trees and now produces bio-dynamic VIRGO Olive oil.
Patrice is a founding member of the Hunter Olive Association and been President for the last 3 years.
She’s an olive oil and table olive judge.
A registered beekeeper, author, researcher, environmental advocate and Conjoint Fellow at the University of Newcastle.
The story of her life was told in the best-selling book THE OLIVE GROVE.
