Raised in NYC where his family owned and ran the beloved Waverly Inn, Justin was born immersed in the restaurant scene. Today, as the owner and executive chef of the renowned Edible Beats Group, Cucci has reinvigorated Denver’s restaurant culture. His six award-winning eateries (Root Down, Linger, El Five, Vital Root, Root Down DIA, and live music restaurant Ophelia’s Electric Soapbox) offer delicious, vegetable-forward menus using innovative sustainability practices and local produce.
Each of Chef Cucci’s restaurants are based in a uniquely designed space inspired by the building’s history—from Vital Roots’ original candy factory to Ophelia’s former brothel to Linger’s start as a mortuary. With his focus on healthy, local and sustainable food--paired with dynamic and innovative restaurant design--Cucci has proven himself a leader in holistic dining and one of the industry’s most creative pioneers.
