July 1st and this is episode number 11! Since we won't have a show closer to the holiday, Happy 4th in advance!
Here it is!! The secret recipe of the week!
Shepherds Pie Luigi Style!
1 lb ground beef or turkey (you choose!)
1 can of creamed corn/regular whole kernel corn (cook first if you want to use frozen instead!)
1 can of cream of broccoli
4 medium sized potatoes
1 1/2 tbsp sour cream
1 1/2 tbsp butter
Shredded cheese for topping
Onion and garlic powders
Salt and pepper
Preheat oven to 350 degrees F/176 C.
Wash, peel, and chop potatoes into chunks. Add to pot of salted water on stovetop, boil on medium-med/high heat until they're cooked. You'll be able to easily pierce them with a fork when they're done!
While those are boiling, you can start your meat, cooking on medium heat, stirring frequently. Once potatoes are done, drain them and pot them back into the pot they were boiled in. Using a potato masher, mash until smooth. Add salt, pepper, butter, and sour cream, mash again and mix until smooth. Set aside.
Continue cooking the meat until browned, adding salt, pepper, onion powder, and garlic powder, mixing it all in. Drain excess oil into a bowl to throw away later. Once browned, turn off burner and set aside.
I make 4 individual-sized pies with this recipe but you can also fit these ingredients into a full 8x8 casserole dish, if you wish! Get those dishes ready for the layers!
First layer the meat, distributing it all evenly on bottom(s).
Second layer is the cream of broccoli. You don't need to heat it is up but can if you want. Use a spoon and scoop it into the dishes, covering the meat with an even layer.
Third is the corn layer, you can use creamed or whole kernel corn. Both are yummy, one just has less ingredients! Also you can use frozen or canned, just be sure to cook it if it's frozen. Spread an even layer over the soup layer. *If you're a cheese fan, add a little layer of it here!*
Fourth layer is the potatoes which seal it all up on top! I like to use a spoon and my hand and flatten out pieces of potato to fit perfectly in the dishes, I'm just a little OCD perhaps! But this works best in my opinion! Just be sure to wash your hands first! Use the potato to cover the top of the casserole(s).
Sprinkle shredded cheese of your choice (cheddar works best I think) on top of the pie(s) and bake for about 10 minutes or until the cheese is melted on top!
