Mocktail Recipe: “Sparkling Tea-bag”
Mix ¾ oz of Oolong Simple Syrup (see below)
With a splash of sparkling water and shake over ice or stir
Pour into glass and fill with more ice and sparkling water
Garnish with one wedge of lemon

How to Make Oolong Simple Syrup
Brew one cup of Oolong tea
Pour ¼ cup of the brewed tea into a sauce pan with ¼ cup of sugar
Boil and then simmer until the mixture becomes thick like a syrup
Allow to cool before using
