In der heutige Folge „Nouvelle Cantine“ ist Bernhard in Pfronten bei Prof. Dr. Volkmar Nüssler zu Gast. Der Onkologe beschäftigt sich in seiner Forschung mit der Verbindung zwischen Ernährung und Gesundheit, beispielsweise mit Bezug auf Krebserkrankungen. Im Gespräch mit Michael und Bernhard teilt er seine Perspektive auf das Einwirken von Köchinnen und Köchen auf Gesundheit von Menschen, sowie die Notwendigkeit der Reflexion des eigenen Ess- und Konsumverhaltens. Dabei wird nicht nur über Herkunft oder Qualität der jeweiligen Lebensmittel gesprochen, sondern gleichsam auch die Herausforderungen mit Blick auf Nachhaltigkeit und dem Umgang mit Tierwohl diskutiert.
In dieser Folge von Nouvelle Cantine begrüßen Bernhard Kampmann und Michael Lorenz einen ganz besonderen Gast: Der bekannte Fernsehkoch, Unternehmer und Autor Johann Lafer. Im Gespräch teilt der Koch, der unter anderem auch begeisterter Hubschrauberpilot ist und selbst einige Jahre gemeinschaftsgastronomisch tätig war, wie er ‚das perfekte rundum Paket schnürt‘. Dabei verrät er außerdem seine Geheimzutat, welches Gericht seit Kindheitstagen sein persönlicher Favorit ist und welchen Stellenwert Balance auch außerhalb des Kochtopfs für ihn hat.
Seit über zwei Jahren gibt es nun unseren Podcast schon. Mit vielen spannenden Gästen und enorm viel Expertise klären Bernhard Kampmann und Michael Lorenz auf, wie wichtig gesunde und nachhaltige Ernährung am Arbeitsplatz ist. Dass der Podcast bereits Nachahmer gefunden hat und in vielen Gesprächen immer wieder auf den Tisch kommt, war Anlass genug, beim Deutschen Podcast Preis ins Rennen zu gehen. Bis zum 20. Automatisierung, künstliche Intelligenz und Robotik sind Themen, die aktuell mehr und mehr Einzug in die unterschiedlichsten Bereiche nehmen. Eine Entwicklung, die auch in der Gastronomie zu beobachten ist. Der heutige Podcast-Gast Hendrik Susemihl ist mit dem Start-up goodBytz ganz nah am Zahn der Zeit: Bereits jetzt bietet das von ihm mitgegründete Unternehmen Küchenroboter an –in gewisser Weise eine Verbindung zwischen Profiküchengeräten und Roboterarmen wie aus der Industrie. Im Gespräch erklärt er Michael Lorenz und Bernhard Kampmann, welche Vorteile eine solche Robotertechnologie für Gastronomiebetriebe haben kann und geht darauf ein, was der automatisierte Küchenhelfer alles (auftischen) kann. Wie sind die Zukunftsaussichten einer solchen Technologie und wäre die nicht vielleicht auch etwas für die Kampmann Business Restaurants?
Etwas tun für den eigenen Berufsstand und junge Köche und Köchinnen fördern – das hat sich nicht nur Bernhard Kampmann auf die Fahne geschrieben. Der Gast der heutigen Podcastfolge trägt aufgrund seines Engagements sogar das Bundesverdienstkreuz: Jürgen Rabe ist seit Jahrzehnten Koch mit Leib und Seele und Vorsitzender des Verbandes der Köche Nordrein-Westfalens. Die Nachwuchsförderung ist einer von vielen Schwerpunkten des VKD. So werden jährlich die besten Kochausbildenden mit dem Laurentius-Award ausgezeichnet, den in diesem Jahr Bernhard Kampmann entgegennehmen durfte. Im Gespräch erklärt Jürgen Rabe, was bei der Ausbildung neuer Köche und Köchinnen entscheidend ist und wie der Laurentius-Award ins Leben gerufen wurde. Außerdem kommt Jury-Mitglied Marketa Schellenberg zu Wort und erläutert die Entscheidung der Jury zugunsten Bernhard Kampmanns.
Wer hätte gedacht, dass man auf der Zugspitze noch mehr als die atemberaubende Berglandschaft genießen kann: Bernhard Kampmann ist in dieser Podcastfolge zu Gast in Garmisch-Partenkirchen im höchsten Restaurant Deutschlands. Nach einer Gondelfahrt hoch auf den 2962 Meter-Berg erreicht er den Gastronomiebetrieb unter der Leitung von Johannes Tiebel, der sich nicht nur gemessen an der Aussicht, sondern auch der Qualität definitiv sehen lassen kann. Im Gespräch erzählt er, was das Arbeiten in der Höhe so besonders macht, was die Zugspitze mit Flugzeugessen zu tun hat und welche prominenten Persönlichkeiten dort schon ein und aus gegangen sind.
In Deutschland gibt es nur neun Restaurants, die mit drei Michelin-Sternen ausgezeichnet wurden. Eins davon ist das in München gelegene „Jan“, geführt von Jan Hartwig, der sich mit dem Gastronomiebetrieb den Traum der Selbstständigkeit erfüllt hat. Und nicht nur das: die Auszeichnung erhielt das Restaurant bereits 162 Tagen nach der Eröffnung. Doch wie hat der gebürtige Niedersachse das geschafft? Bernhard Kampmann ist zu Gast in München und geht der Sache auf den Grund. Im Gespräch der Köche ist vor allem Individualität und Leidenschaft zum Kochen Thema. Außerdem erklärt Jan, warum „Plagiate“ bei ihm niemals auf den Teller kommen und weshalb auf dem Weg zum Sterne-Koch neben Schweiß und Tränen auch das Quäntchen Glück nicht zu verachten ist.
In dieser Episode lässt der Bundestagsabgeordnete und CDU-Bezirksvorsitzende OWL Ralph Brinkhaus seine kulinarischen Lebenslauf Revue passieren: Heute im Bundestag hat er zwar die Auswahl zwischen drei verschiedenen Currywurst-Varianten, doch das sah beispielsweise in seiner Bundeswehrzeit ganz anders aus.
