Episode 10: Bernardo Paladini

Bernardo Paladini, is a rising luminary in the international dining scene. Starting his culinary journey in Rome’s trattorias, he rose to sous-chef at Acqualina before joining Osteria Francescana in Modena. Paladini later led the opening of Ristorante Italia at Eataly Istanbul, managed Franceschetta58 in Italy, and became head chef of Torno Subito in Dubai. Drawing on his experience with the Francescana Family, Paladini now oversees Torno Subito in Miami, infusing it with his Italian heritage and passion for culinary artistry.

In our conversation we talked about Italian food culture, his experiences in Acqualina and how it was to learn in the renowned restaurant Osteria Francescana, what it means to be a modern chef, opening a restaurant in Dubai, how the Torno Subito concept changed across the cities and how they got a nonna to prepare the pasta in the Miami location.

In addition to being a James Beard Award winner, Schwartz is one of the leading figures in South Florida’s restaurant scene. His flagship restaurant, Michael’s Genuine Food & Drink is renowned for its casual atmosphere and focus on fresh, local ingredients. Schwartz has expanded his brand to include notable spots like Nemo, Amara and Harry’s Pizzeria, earning national acclaim. All of them are infused with a philosophy guided by the ideas of slow food, local ingredients and down-to-earth cooking.

Episode 7: Timon Balloo

Based in Barcelona, he has established himself as a true artist with a passion for innovation, constantly pushing his personal musical vision forward, which can be seen in his album 'Polyphony'. Beyond all of this, he is a food lover and, in his travels touring around the world, he has gained a fascinating perspective on the world of cuisine.

In our conversation, we talked about the similarities of being a DJ and being a chef, how he approaches food during touring, the evolution of the food scene in Barcelona, his new tattoo and the beauty of empanadas.
