You've heard the phrase "ultra-processed foods" everywhere. The 2025 Lancet Series called them a global health threat. The wellness world treats UPF as the new villain. But most people still can't tell you what counts as ultra-processed and what doesn't — because the definition is genuinely fuzzy, and the term is doing a lot of work in one breath.

In this fireside chat, Ashok and Meera Vasudevan hand listeners the literacy tool the conversation is missing: the NOVA classification system. Four simple groups, from whole foods to industrial formulations, that turn a confusing buzzword into a practical pantry test. Ten seconds with any food label, and you'll know roughly where it sits.

The episode also draws a line most wellness conversations don't: processing is not a slur. Fermenting, soaking, sprouting, milling — these are processing too. Idli batter is processed. So is sourdough, miso, and yoghurt. The villain isn't human food preparation. The villain is industrial ultra-processing — formulations engineered for hyper-palatability, packed with additives, designed for a long shelf life and a short attention span.

Honest about the scientific debate (the NOVA framework has genuine critics), generous about the gems (most traditional cuisines are NOVA Group 1–3 by design), and ruthlessly practical about the action: read the back of the box.

"Inflammation" is the word of the wellness decade. It's on supplement bottles, in podcast titles, and on the back of every functional drink. But ask ten people what it actually means, and you'll get ten different answers — most of them muddled with weight, fatigue, or vague dread.

In this fireside chat, Ashok and Meera Vasudevan clear the fog. The episode draws three lines most wellness conversations refuse to draw: the difference between acute inflammation (the body healing) and chronic inflammation (the body smouldering), the fact that inflammation is not the same as obesity (slim people can be chronically inflamed; people in larger bodies can be metabolically calm), and the most under-told truth in the conversation — what inflames you is not what inflames me.

Eat Like Your Gut Is Listening

Over the last three episodes, we have made the case that the gut is the organ running the show. That your mood, your skin, your lungs, and your brain are all in conversation with your microbiome, every single day. That dysbiosis -- an imbalanced, low-diversity gut ecosystem -- is the common thread behind conditions that send people to four different specialists.

The Rash, The Wheeze, and The Gut Nobody Checked

The eczema cream that works for a while and then stops. The inhaler that manages the wheeze but never quite resolves it. The acne that comes back every time you think you've cracked it. These are familiar stories. And they share something that rarely comes up in the dermatology or respiratory clinic: a gut that nobody thought to check.
