It’s inevitable that we will most likely gain a little weight during the holidays. Studies say, the weight gain starts in OCTOBER! To combat this yearly battle with the bulge, I've got a few solutions to help you keep a handle on all of the rich food and booze.
This week's party potluck recipe: Pavlova!
4 egg whites
1 1/4 C. granulated sugar
2 teaspoons cornstarch
2 teaspoons white vinegar
1 teaspoon vanilla extract
1 quart whipping cream
1 C. powdered sugar
1 pomegranate seeded.
Whisk the egg whites until frothy.
Add the granulated sugar and whisk until soft peaks form.
mix together the cornstarch, vinegar and extract to make a slurry. Add the slurry and turn mixer on high with the whisk attachment. Whisk until medium to stiff peaks form.
Spoon or pipe into a 9” ring on a sheet pan with parchment paper.
Bake at 250 degrees for 1 hour.
Whip the cream and add the powdered sugar. Dollop the cream on the cooled pavlova, and garnish with pomegranate.
Thats a lot of sugar…but it’s grain free!
