In today's session, we have a true artist, Chef Ko Wai Chong @breadpitt. He is a pastry chef, entrepreneur and consultant.
He specializes in creating modern French pastries with the perfect balance in flavors and textures. He was a runner up at the Mondial des Arts Sucres! He is currently based in Malaysia and is the co-founder of C3 lab, a consulting company focused on Research and Development for pastry and chocolate in the F&B industry.
We talk about how he stumbled upon pastry. His curiosity and to want to improve his craft every day, led to him progressing in the industry and eventually becoming intensely passionate about pastry.
