Sam and Kay met in Kalispell, Montana, and have journeyed and cooked around the Pacific Northwest since.  Their travels took them to Alaska and then to Portland honing their skills in savory and pastry, respectively. After working their way through numerous positions, they both landed at Irving Sreet Kitchen.  Sam then jumped at the opportunity to cook at the storied Restaurant Beck, where he took charge of the kitchen in a matter of a couple of years. Hard to believe it took us 6 years to finally have Nate Tilden on the podcast (our fault, not his!).  Nate has been working in the restaurant industry for well over 20 years, having started out as a dishwasher and then working his way up to chef.   He managed Castagna for a  few years, before opening up Clyde Common in 2007. Astrid Ensign fell in love with Italian culture at the age of 11 in very rural Montana when she happened upon a National Geographic Magazine article. By 15 she was an exchange student in Northern Italy, and has spent 25 years immersing herself in the architecture and food of all regions of the mainland and Sicily.
