Turkey Tetrazzini
½ pound spaghetti
1/8 cup diced yellow onion
1/8 cup diced green pepper
½ cup diced mushrooms
1 ½ Tbsp margarine
1 can of cream of mushroom soup
1 pound cooked diced turkey
2 ½ ounce grated parmesan cheese
Cook spaghetti in boiling water until tender. Drain and rinse noodles.
Sauté onion, diced green pepper, and mushrooms in margarine until tender.
Mix all ingredients (except the cheese) together.
Pour turkey and noodle mixture into baking dish and sprinkle the top with parmesan cheese.
Bake in oven at 375 degrees for 45 minutes, or until internal temperature reaches 165.
Executive Chef Tom Zuber graduated from Eastern Illinois University in 1993 before then attending the Culinary School at Kendall College in Chicago. After culinary school, he worked for the Ritz-Carlton Hotel in St. Louis, the Ritz-Carlton, San Juan, and the Chase Park Plaza. In 2009, he became a Chef Instructor at L’Ecole Culinaire and in 2015 he joined Lutheran Senior Services as the Executive Chef at Laclede Groves.
