Slather with Dijon mustard, rub all over with Bandrum Base (brown sugar + onion powder + garlic powder equal parts, half as much salt). Wrap in foil, marinate overnight in fridge. Oven at 150°C — slow bake in foil for 2½ hours. At 2:30 mark — open foil, baste with apple juice or BBQ sauce, bake uncovered 30 min more. Remove from oven, reseal foil, rest 30–60 min. Unwrap, cut into individual ribs. Serve with BBQ sauce, Russian salad, homemade mayo.

Ven Pongal. Dry roast ¼ cup split yellow moong dal 2-3 min until fragrant. Add ½ cup short-grain rice, wash and drain. Add 2½ cups water + ¾ tsp salt. Pressure cook 3-4 whistles until soft and mushy. Mash gently. Temper: heat 3-4 tbsp ghee, add 1 tsp cumin + 1 tsp coarsely crushed black pepper +chopped ginger + pinch asafoetida + 10-12 cashews + curry leaves. Sizzle until cashews are golden. Pour over pongal, mix, serve hot.

India is preparing to bring AI into its criminal justice systemby the end of this year -- faster investigations, better case management, more transparency. But faster isn't the same as fairer. Meanwhile, Indian factory workers are being asked to record their own work to train AI-powered robots -- teaching the machine to eventually do the job, using footage of themselves doing it. When AI learns to judge, and AI learns to work, by watching us -- who's actually deciding what it learns, and what it's for?

Turkish Delight (Lokum). Sugar syrup: boil 4 cups sugar + 1½cups water + 2 tsp lemon juice to soft-ball stage (115-120°C). Cornstarch paste: whisk 1¼ cups cornstarch + 1 tsp cream of tartar + 3 cups water until smooth, cook over medium heat until thick and white. Pour hot syrup into paste, whisk hard, simmer on low 45-60 min until golden and translucent. Stir in 1½ tsp rosewater/vanilla, food colouring and chopped pistachios if desired. Pour into a lined dish, chill several hours or overnight. Cut into squares, toss in powdered sugar + cornstarch mix.

Two weeks ago, this show covered the night the US government forced an AI company offline for the first time -- a surprise, no warning. This week, India's central bank did something related, the opposite way round: a draft framework requiring every bank using AI to build in an immediate kill switch, board-level accountability, and constant human oversight -- not a surprise, a rule built in from day one.

Google just lost the man who helped invent the technology behind almost every AI you use. Noam Shazeer, co-creator of Gemini and a Transformer architecture pioneer, left Google for OpenAI this week. Nobel laureate John Jumper, the scientist behind AlphaFold, joined a rival too. Alphabet's stockdropped enough to wipe out $225 billion in market value in days. For a hundred years, companies were the moat. Right now, in AI, the moat is a few hundred people — lose the wrong ten, and the market notices instantly.
