Apple Breakfast Cookies (make with an adult)
1 cup Rolled Oats
1 cup All-Purpose Flour
1 cup Whole Wheat Flour
6 tablespoons Unsalted Butter, Softened or coconut oil
1/2 cup Honey
1/2 teaspoon Baking Powder
1/2 teaspoon Salt
1/2 teaspoon Baking Soda
1 teaspoon Cinnamon
¼ cup apple sauce
1 cup Shredded Apple (we like to use tart apples like Granny Smith)
1/2 cup Raisins
Spray a microwave safe bowl with cooking spray. Put butter or coconut oil and honey in the bowl. Microwave for 30 seconds or more until the butter or coconut oil and honey are mostly liquid. Add in all the other ingredients and mix until combined. Chill the dough for at least one hour.
Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat or spray with cooking spray.
Drop the dough onto the prepared baking sheet. For bigger cookies, we use a 1/2 cup measuring cup. If you want mini snack cookies, use a ¼ cup measuring cup. Using the bottom of the measuring cup, push gently on the cookie to flatten and spread it.
Bake for 9-15 minutes (depending on size) until lightly browned and set. Let cool before eating.
