Tortilla Pinwheels
You
1 adult
1 package of 8-inch tortillas
1 packet of ranch dressing mix
1 cup sour cream
1 cup room temperature cream chese
1 cup shredded cheese (colby, cheddar, mozzarella...)
Small diced vegetables (e.g. shredded carrots, shredded broccoli, etc.)
* If you have a dairy allergy, you can substitute hummus for all the dairy items
First, you will need to mix the sour cream, cream cheese, ranch dressing mix, and shredded cheese together. Spread about ¼ cup of the mixture onto a tortilla. Sprinkle some vegetables over the tortilla leaving about 1/2 an inch on the outside of the tortilla without vegetables. Do not add too many otherwise you will not be able to roll it into a tight pinwheel that stays tight. Roll the tortilla from one end to the other to make a tight roll. Keep repeating this process until all of the ranch mixture and tortillas are gone. Wrap all rolls tight with plastic wrap and put in the refrigerator for at least two hours. When the rolls are good and cold, remove them from the plastic wrap and cut them into one to two-inch circles. If you are going to eat them at home, chow down! If you are taking them on the road, rewrap them in plastic wrap and go have fun!
