Today we have with us Toni Okamoto, author of Plant Based On A Budget, to talk about what got her started on the plant journey, what the change was like, and the positive benefits she has experienced. Money was very tight when she went plant based, yet she was still able to create affordable meals that were completely plant based and healthy, so she decided to compile family based recipes, turn them plant based, making sure the ingredients were accessible, and she put them on plantbasedonabudget.com. We discuss creating meal plans and what you can do to save and eat healthy.

“One thing that I heard that was preventing them from eating healthier, despite what the doctors were saying, is that it was too expensive, and at that time I was sharing a bedroom with two other people, I rode a bike everywhere, I didn’t have any money, yet I was still eating plant based. So it was confusing to me that that was something that was such an obstacle, that it could possibly lead to death. My family literally, they were dying.” 11:36

“Weight bearing exercise is incredibly important for bones as is other nutrients besides calcium. We need vitamin D, we need to make sure we have other minerals, our vitamin K, those kinds of things, and so I do think that calcium gets overblown as far as its importance in our bones. We do need it, but we don’t probably need as much as we think we do and we need to make sure that we have all these other elements in place.” 13:32

In this episode we meet with producer and writer, Kip Andersen, known for the documentaries Cowspiracy: The Sustainability Secret, What The Health, and Seaspiracy. He tells us about how and why he got started on his plant based journey and into the film industry. Kip has learned a lot of things about the food industry, our health, and how it all affects how we live life or perceive our own well being. One amazing thing he has uncovered is how much animal meats and fats play a role in diabetes as opposed to the widely believed assumptions that it mainly comes from consuming sugar. We learn how much of the environment and forest is destroyed by man, and how much plastic affects the ocean and nature, and then we discuss the future of health and where Kip sees the industry going.

“All of our films have a facts page, and so if anyone debates you on this, go to our facts page. Every single one is double sourced. We have to go through so [many] legal protocols to have these films on Netflix because this is a trillion dollar industry. One false claim and they could sue us. So these facts are true. If they’re not, the egg industry would sue us, period.” 23:43

Nutritional tip of the week 17:25
“When we are using stimulants, stimulants don’t give us energy. They stimulate the energy we already have. So we’re not getting more energised because we had some caffeine. That caffeine stimulated the energy in our body, but when we already have stress and woke up with a head full of to-dos, we have enough energy. Adrenaline is already there. Your resources are already activated. Your heart is racing to get all those things achieved on the to-do list.” 6:08
