I grew up under Mama Elen’s strict code of delicadesa—a refined standard of cleanliness and order that governed her kitchen and, by extension, my entire world.
* My Culinary Rigor: I watched her refuse every shortcut. If a recipe for tripe required ten grueling steps to clean it properly, I saw her perform all ten. I learned that excellence has no “easy way.”
* The Dinuguan Rule: I can still see her “eagle eye” watching as the pig’s blood was caught for Dinuguan. She insisted it be caught directly, ensuring not a single drop ever touched the ground.
* My Boundaries: She taught me the importance of personal space. She was fiercely protective of her belongings and never borrowed or lent clothes; she couldn’t bear the thought of the “smell” or stains of others on her things.
* The Scent of Her Authority: To me, authority smells like Heno de Pravia soap. Even after we moved to the U.S., she special-ordered it from Spain to maintain that crisp, unmistakable fragrance.

For me, the kitchen was a place of “heat and magic,” where she whispered secrets that only I was meant to hear. While I initially saw the work as a “grueling duty,” I realize now she was passing down a kingdom to me.
