Celina Lazarus is the co-founder, owner and director of First Crop Coffee Australia, a raw coffee importing company and Maillard Atelier, a coffee co-roasting and educational space in Melbourne. Her community involvement is at the heart of both businesses as she invests into people through business. Through First Crop Coffee she has been able to finance the building and running of schools and health centres in coffee growing regions. Celina has a hands on approach to change on an international and local level. She is a well known figure of the specialty coffee industry and is an advocate not only for women but woman in colour within the industry.

Marc Beauregard is the creator and roaster for Bedfellows Coffee Roasting Company in Encinitas, California. He is an internationally renowned singer/songwriter and somewhat of a spiritual maverick. Beauregard has been featured on several podcasts and is currently penning a novel regarding the intersection of nature and psychedelics as medicine, and surfs regularly near his Encinitas home.

Matthew Hodges is the founder and CEO of GeoCertify LLC. He has worked in the coffee industry since 2006. His interest in coffee was initially sparked in Rwanda, while helping relaunch the Rwandan tourism industry after the war and genocide. At that time Mr. Hodges began working to help Rwandan coffee farmers manage risk and develop identity in the growing specialty coffee sector.

As system architect of the GeoCertify Traceability system, Mr. Hodges applied cloud-based technology to directly connect farmers with consumers. He began working in Ethiopia in 2012, in partnership with Starbucks, to scale to the magnitude and diversity of the global coffee market.

In this second interview Dennis Raimondi delves more into the Barista league which was founded by Steven Moloney. Steven Started at Love Coffee Roasters in Lund, Sweden and he has since moved on to head up Da Matteo’s barista training program in Gothenburg, Sweden. Steven is a two-time winner of the Swedish National Barista Championship (2016, 2017) and was part of the winning team in the World Barista Cup 2016. He has developed the Barista League from an impromptu gathering of 10 baristas in a countryside roastery (2015) to an event attracting hundreds of the best coffee professionals from all over Northern Europe (2017).

Sestic pays attention to the freshness of his coffee beans.

"I've looked at a calendar and seen when coffee will ripen in each country. Seasonality is very important and we knew that the season would finish in Colombia from September to October. Just like fruit and vegetables, when they're in season they taste great. It's the same thing with coffee."
