In Episode 33 of The Enlightenment Podcast, Shamim and Hanan speak with Joudie Kalla — a Palestinian-British chef, food writer, artist, and passionate activist for Palestinian rights.
Joudie is the author of the critically acclaimed cookbooks Palestine on a Plate and Baladi, which showcase her deep connection to Palestinian culture through food — and stories passed down from her family’s history in Palestine.
After completing her master’s degree at the Sorbonne in Paris, Joudie trained at the prestigious Leith’s School of Food and Wine in London. She went on to hone her culinary skills at renowned restaurants, including Gordon Ramsay’s Pengelley’s, Daphne’s, and Papillon under Chef David Duverger.
From 2010 to 2013, Joudie ran her own catering business and owned a London deli called Baity Kitchen (“My Home” Kitchen). She also hosted Palestinian supper clubs at The Phene and other restaurants in the city — bringing people together over rich flavors and deeply rooted traditions.
Beyond the kitchen, Joudie is an artist and a fearless advocate for Palestinian rights. She doesn’t just cook Palestinian food — she tells stories of identity, belonging, and resilience through every ingredient. For Joudie, food is a powerful form of resistance against colonialism. It’s a way to reclaim heritage, preserve memory, and challenge the erasure of Palestinian culture. Her dishes are declarations — of existence, of history, and of home.
