  • Cooking Is Like Playing Jazz
This is an excerpt of a talk I gave at the Institute for Advance Study in Princeton, New Jersey on The similarities between African cooking and Jazz. Improvisation is creating as you go along. Jazz musicians play by ear and from printed music, and then they improvise or give solos. Similarly, so do cooks particularly those of West and Central African heritage on the continent and throughout the Americas. These cooks come from cultures steeped in oral histories in which griots taught a communities’ history from one generation to the other. Recipes passed from one generation to another in a similar way; from one woman to another woman, from one generation to another generation. • New England Foodways
The following is an excerpt of an ArtScience talk on New England Foodways held in Cambridge, Massachusetts. Leah Mennies, Senior Food Editor at Boston Magazine organized and hosted the event which consisted of a Panel discussion. Panelist included Babson Food Historian Fred Opie, Irene Li, chef/owner of Mei Mei, and Marc Sheehan, chef/owner of Loyal Nine. Both are Cambridge based restaurants. The theme of the talk is the future of New England Foodways--How do we define them now? How should that change? What are the challenges? What does a regional sense of place through cuisine look like? How does the past inform this? How can the storytelling surrounding New England cuisine be stronger/better/more informed? What does that look like here in Boston/Cambridge vs. in the region as a whole?
Let's keep the conversation going with panels of experts from different fields and occupations in as many spaces as possible around the region--colleges, public and private libraries and schools, churches, historical societies and museums. And let's record these panel and publish them as a series as the first step in documenting the region's foodways. Please share your ideas and suggestions for advancing the project. • Babson Students Interview Fred
Today's show is different in that Babson students on the last day of a Summer 2019 course interview me. I interview each of my students to help them get to know each other during the semester. This is a great team building exercise that I learned from reading Jon Gordon’s book The Power of Positive Team for creating a positive team culture. I do interviews with my U14 Girls team and college students and both groups love them! Try it with your team on the field and in the work place. On the last day of class which was last night the students interviewed me and my answers made me think about my family history, parenting, teaching, and my desired legacy. • Food And the African Slave Trade
As a food historian when I think of sugar I think of slavery in places such as Louisiana, Florida, Cuba, and Brazil to name a few regions of the Americas. The demand for sugar led to massive demographic changes in Africa and the Americas. In the book Hog and Hominy, I in part look at the question what role does food play in the Atlantic slave trade?
